Ricotta bruschetta with fennel and radicchio

Here is a simple lunch idea when the weather is hot, and time is limited. Its more of an assembling of ingredients than a recipe. Toast some of your fave bread, and drizzle with olive oil. Season and spread over some ricotta. I've whipped mine with a little lemon and seasoning. Lay some small radicchio leaves over the top with some shaved fennel which gives a delicious bitter note. Top with some peppery leaves and drizzle with honey, hot honey if you have it. This hits all the textures in the mouth with the soft ricotta, and crunchy toast, the fresh crispy leaves and fennel. Squeeze a little lemon juice to add a little sour and your mouth with thank you.
